There's not much to leveling Herblism or mining. The thing about Herbalism and mining is they are profitable. Herbs sell well in the Auction House, as does ore. If you really need gold, combining Herbalism and Mining on a high-level character will be very profitable.

You can’t buy mats to level these skills. You have to do it the hard way, with a lot of running around. But you can buy tools to improve your gathering prowess.

Harvest Peacebloom and Silverleaf in the starting areas for any race. At around skill level 15 you can also harvest Earthroot. As you would do with mining, make up circular routes through an area for harvesting. Make sure your Herb finder is on so you’ll see a gold dot for an herb on your mini-map. If you’re doing this on a high-level character, then a mount is going to really speed the process up for you.
You’ll also need to train the Herbalism up to Journeyman at some point.
Mining
Mining, run a route in Durotar or Morogh. Scoop up all the Copper you find. Get to skill 75.
75-125
Make your harvesting routes through The Barrens or the Redridge Mountains looking for Mageroyal and Earthroot.
Mining
Hit Thousand Needles, Redridge Mountains, and Hillsbrad Foothills.

100 to 175
After 70, you can start harvesting Briarthorn for skill ups on the same routes you’re running in the Barrens and Redridge Mountains. Add a route through Loch Modan as well.
Mining
Run routes in Thousand Needles and Arathi Highlands (mostly in caves).
Herbalism to 135
Now in the Hillsbrad Foothills and in the Wetlands you should be able to harvest Wild Steelbloom, Stranglekelp, and Briarthorn on your routes.
Herbalism to 150
Still running through Hillsbrad Foothills and the Wetlands start collecting Kingsblood, and Bruiseweed. You can also add a Stranglethorn Vale route now.
And now it’s time to train to Expert Herbalist.
175-210
Still running the Hillsbrad Foothills, Stranglethorn Vale, and the Wetlands routes start collecting Liferoot (and the others, of course). Each harvest should hopefully ding you one level up.
Mining
Run routes in the Searing Gorge and the Badlands.
Herbalism to 210
Add a Dustwallow Marsh route now. Continute in Stranglethorn Vale. Harvest Goldthorn, Fadeleaf, and Liferoot.
Somewhere around here you should go get trained again to become an Artisan Herbalist.
Herbalism to 235
It's time to change locations. Run in Tanaris and Searing Gorge. Harvest Purple Lotus and Firebloom.
Herbalism to 250
In the Swamp of Sorrows and the Hinterlands run routes harvesting Blindweed, Sungrass, and Purple Lotus. Get to skill level 250 or so.
275
Harvest Gromsblood in the Blasted Lands.
Now you can train up to be a Master Herbalist at a trainer in the Outlands.
Mining
Continue in the Searing Gorge.

300
Run routes in Felwood and the Un'Goro craters harvesting Dreamfoil, Golden Sansam, and Gromsblood.
Mining
Now add the Burning Steppes and the Eastern and Western Plaguelands to your routes.
When you hit 300, it's time to move onto the Outlands.
300-325
Now (or even the previous step) would be the time to move to the Hellfire Peninsula in the Outlands. Run routes harvesting Plaguebloom, Mountain Silversage, and Dreamfoil.
You can also continue in Felwood and Un'Goro.
Mining
Sticking in Hellfire Penisula will easily get you to 325 skill. You can also stay there to hit 350 if you wanted.
Herbalism to 340
Run routes in Terokkar Forest and Nagrand harvesting Dreaming Glory and Felweed.
Herbalism to 365
Harvest Ragveil, Terocone, and Dreaming Glory from Zangarmarsh and Terokkar Forest.
Now let's finish off!
Herbalism to 375
Run routes in Netherstorm and Shadowmoon Valley to collect Netherbloom and Nightmare Vine.
You should hit skill level 375, continue until you do. Congratulations, you've now mastered a money-making skill. Raiders, Alchemists, and Twinks all buy herbs in the AH. Collecting them for your guild's raids will make you a valuable asset to the guild.
Mining
Nagrand is a great place to mine, especially since you can fly over obstacles and mobs.
